Overnight Steel Cut Oats

I have my breakfast ready for the week! Steel cut oats are my favorite go-to breakfast recipe.

Ingredients

  • 1 cup steel cut oats
  • 3 cup water
  • Combine first two ingredients and then let simmer for about 30 minutes.
  • When done, add in:
  • 1 tbsp chia seeds
  • 1 tbsp ground flax seed
  • 1/2 – 1 tsp of cinnamon depending on how strong you like it to be
  • 1/4 tsp vanilla extract
  • 1/4 tsp nutmeg
  • 1 – 2 tsp maple syrup, local honey or brown sugar (optional)
  • 1-2 tbsp unsweetened shredded coconut
  • 1/2 – 3/4 cup almond milk (depending on how thick or thin you like your oatmeal)
  • Throw all the contents into a jar or bowl and mix well.
  • Store in the fridge overnight. You can eat it cold or warm. When I warm it up, I usually add a splash of almond milk. (Use organic ingredients whenever possible)
