Like most people, I never liked brussel sprouts….until now! This recipe is absolutely delicious! Several of my family members tried it and said they liked it too, so it must be good! This was so simple and makes a great side dish to any home cooked meal.
Coconut Maple Roasted Brussel Sprouts
1-2 pounds of brussel sprouts (I just cut mine off the stalk, I’m not sure exactly how much I used, but enough to fill a large cookie sheet.
1/4 cup melted coconut oil
1/4 cup pure maple syrup
Himalayan pink salt and pepper
Preheat oven to 400 F. Line a cookie sheet with unbleached parchment paper. Wash and dry the brussel sprouts. Cut each one in half and place on cookie sheet. Mix the melted coconut oil and maple syrup in a bowl and then pour over brussel sprouts. Mix thoroughly. Add salt and pepper to your liking. Place in oven and set timer for 20-25 minutes. Mix halfway through. Enjoy!
