I loved Jr. Mints as a kid. Now with the holidays are approaching, I was trying to think of something minty and chocolaty to bring for family gatherings.
Homemade Organic Junior Mints
3/4 cup Organic Coconut Oil
1/4 cup Raw Local Honey
1 tsp Peppermint Extract
1 cup Organic Chocolate Chips
Whip coconut oil, honey and peppermint extract in a bowl using a hand mixer. Put in the fridge for about 5-7 minutes. Get out a cookie sheet and lay some parchment paper on top. Now, you can use a 1/2 teaspoon to scoop out the mints and place on the parchment paper into little balls. I found that too time consuming. So I got out my cake decorating set and piped away. Place them back in the freezer for at least 15 minutes to harden. While you’re waiting, get out a saucepan and melt the chocolate chips on low/medium. It should only take a few minutes to melt. Get your mints back out of the freezer and use a spoon to coat/drizzle the melted chocolate over each mint and lay back down on the same parchment paper. Place in freezer to harden. When you’re ready to store the mints, you can either keep them in the freezer or put in the refrigerator. (I like the freezer option the best).
Makes about 100 mints.
