Date Nut Balls

I’m always looking for a good recipe that is quick, easy and healthy. I also seem to have ripe bananas on hand, so this is a great recipe to use one up. This is one of my son’s favorite snack items. Plus, it’s packed with plenty of protein and energy which makes it a great snack for on the go.

Date Nut Balls

Ingredients

  • 2 cups raw almonds and/or cashews (I used 50/50 of each)
  • 1 ripe banana cut in four pieces
  • 10 pitted medjool dates

1. In a food processor, grind the nuts.

2. Add the banana and the dates and pulse until a dough starts to form.

3. Roll into little balls and place on a baking sheet lined with parchment paper. Put in the fridge to set.

Keep them stored in the fridge and they should last a week or two (if you don’t eat them all up, of course!) I like to keep them in these baking cups because it’s fun for my son to grab and have a snack.
