Pumpkin Spice Chia and Hemp Seed Granola

I make granola about every two weeks. I experiment and make it different each time. This time, since it’s fall, I thought I’d go for the Pumpkin Pie spice. I also got a really awesome deal on non-GMO hemp seed that I couldn’t wait to try. So here’s my latest granola recipe:


Pumpkin Spice Chia and Hemp Seed Granola


4 cups organic oats
2 tbsp organic chia seeds
3 tbsp hulled hemp seeds
2 tbsp unsweetened shredded coconut
1 tsp Pumpkin Pie Spice
1/4 tsp Himalayan pink salt
1/2 cup Organic Coconut Oil
1/4 cup pure maple syrup (or honey or combo of both)
1/2 cup raisins


Preheat oven to 300 F. Mix the first 6 ingredients together in a large bowl. Melt the coconut oil and mix with maple syrup. Add mix to the dry ingredients (add raisins after it’s baked). Stir until combined. Place on cookie sheet lined with Parchment paper (preferably unbleached and chlorine free!). Bake for 35 minutes. Set timer for 10 minute intervals and stir every 10 minutes until done. Let cool before you store in Mason Jar. Add the raisins while it’s cooling. I eat mine on top of my yogurt or kefir or as a cereal with almond milk.
