The best damn broccoli bacon cheddar soup!

I shared a photo of this soup while I was making it last night and it got such great responses, that I had to share this recipe with you all today. I’ve made broccoli cheese soup before, but it has never tasted this good. I think I have perfected my recipe now. And let me tell you, it was a hit! My husband loved it so much, he ate 3 bowls of it! I think I might make it again later this week and double the batch! Oh, and my husband got to choose the name of the recipe for me. Thanks hunny! 🙂

The best damn broccoli bacon cheddar soup!

Ingredients

2 tbsp grass fed butter (like Kerrygold)
1/2 cup chopped onion
2 garlic cloves, minced
4 slices bacon (nitrate/nitrite free)
5 sm/md organic red potatoes (peeled and chopped into cubes)
1 tbsp organic whole wheat flour
1 quart organic chicken stock
4 cups steamed broccoli florets
1/3 cup organic half and half
1/2 cup organic 2% or whole milk
1 1/4 cup shredded cheddar cheese (rbST free)
1 tablespoon parsley
Himalayan pink salt and pepper to taste

Instructions

While your broccoli is steaming, chop up your onion, garlic, bacon and potatoes. Melt the butter in a soup pot and saute the garlic and onion until translucent. Add the bacon and potatoes and keep on medium-low, stirring occasionally and add some salt and pepper. Once the potatoes are slightly browned and bacon crispy, add the flour. Then stir in the chicken stock. Let simmer for about 15 minutes. Then add in steamed broccoli. Stir in half and half and milk. Let sim for a few more minutes. Add in some more salt and pepper and now the parsley. Stir in the cheese. Let sim for another 10 minutes and enjoy!!

Total time from prep to ready:about 40 minutes
Serves: 4-6
